Introduction

This a very popular side dish in Costa Rica. This a very popular side dish in Costa Rica.
Number of Servings: 10

Ingredients

    Potato, raw, 4 small
    Egg, fresh, 4 jumbo
    Beets, fresh, 1 can
    Mayonnaise, 1 tbsp
    Plain Fat Free Yogurt, 4 oz
    Onion, .5 cup

Directions

Cook potatoes and hard-boil eggs. Let them cool.
Chop onion and beets and mix with mayo and yogurt. Season to taste.
Chop potatoes and eggs in small bite sizes and add to salad.
Servings are about half-cup.
