Yellow Rice Pilaf

Introduction

Made with cumin, coriander and tumeric this pilaf is very aromatic and delicious. Made with cumin, coriander and tumeric this pilaf is very aromatic and delicious.

Ingredients

    4 tsp olive oil
    1 lg clove garlic, minced
    1/2 lg onion, minced
    1 lg stalk celery, minced
    1/2 c. red pepper, minced
    1/2 c. carrots, minced
    1 c mushrooms, minced
    1 c white rice, (uncooked)
    2 c fat-free chicken broth
    1 tsp cumin
    1 tsp tumeric
    1/2 tsp curry
    1/2 tsp coriander

Directions

Saute vegetables in olive oil until onion is transparent. Add rice and saute for 2 minutes more. Add chicken broth, cover and simmer until rice is cooked and there is no liquid left.

Makes approx. 8 1/2-cup servings.
