1 c. (dry) quinoa
1 can (1/5 c.) black beans
1.5 c. salsa
3 large bell peppers
Cut bell peppers in half lengthwise, remove stems and seeds. Place on baking sheet and stuff each half with quinoa mixture. Roast in oven at 350 for 20-30 minutes or until done.
