Scrambled Eggs for One
Submitted by: SOOKIE
Number of Servings: 1
Ingredients
-
1/4 c green bell pepper, chopped
2 T onion, chopped
2 eggs, large
1/4 c low-fat cottage cheese
2 T cheddar cheese, reduced/low fat
2 T salsa, no sugar added
Directions
Beat eggs and cottage cheese together
Spray nonstick skillet with cooking spray. Cook peppers and onions on medium heat, just until tender - about 2 minutes.
Add egg mixture and cheddar cheese. Reduce heat to medium-low. Cook until set, stirring as often as needed. Top with salsa and enjoy!
1 serving
NOTE: in place of bell pepper, you can try any other veggie. I'll sometimes use julianned squash and onions in place of the bell papper.

This was fantastic! I had large curd cottage cheese & while it was cooking, I mashed it-gave it a creamy consistency (couldn't taste the cottage cheese at all). I usually like my eggs plain, but this is so good and flavorful not to mention VERY filling, this is just what I needed, thanks for sharing! - 2/26/10
