Sweet Potato and Black Bean Burrito

Introduction

Amazing lunch - full of fibre and protein! Amazing lunch - full of fibre and protein!
Number of Servings: 2

Ingredients

    Half a large sweet potato
    1 cup black beans
    1 galic clove
    Half an onion
    2 wedges light laughing cow cheese
    1 tsp cumin
    hot pepper flakes
    Salt and pepper to taste

Directions

Bake sweet potato in skin at 400 degrees for one hour.
Brown onion and galic in skillet until soft.
Add black beans and spices and cook for 5 minutes.
Mash together black beans and the laughing cow cheese until creamy
Heat tortilla.
Mash sweet potato on top of tortilla.
Add the bean cheese mixture.
Roll and Enjoy!

    Very good! I put a thin slice of ham on each tortilla before adding the sweet potato and beans and used farmer cheese instead of Laughing Cow. Microwave the sweet potato on high for 8 minutes rather than baking to save time. Tried a second batch adding spinach, rice, and cheddar. Yum! - 1/10/08

    Really good! I doubled it just to use the whole potato so my husband had a snack after work and he LOVED them. I didn't have any pepper flakes, so I left them out, and used less cheese to reduce a few calories there. Great recipe!! - 4/20/07

  • Delicious!!! I was really skeptical at first but have been trying to push out of my "comfort zone" with foods. I added some cumin and cinnamon to the black beans and substituted mozzarella for the laughing cow cheese because that's what I had available. Very filling. - 1/30/14

  • I order this dish at a resturant, but didn't have the recipe. This is very close to what I had except I left off the Laughing Cow cheese and added collards to the sweet potatoes and beans. Added a Salsa...I used the Verde (green) as a dipping sauce only 5 calories for 2 Tbps YUM Thanks. - 4/28/13

  • I loved this meal! Easy enough to make-even if you make slight alterations to the amounts it still tastes amazing. I didn't have garlic cloves so I used garlic powder-I will say that there was quite a bit of onion, so I'll probably reduce that in the next iteration. - 3/7/13

  • Okay. I'm not going to lie - when I first saw this recipe I was like WTheck? But I took the chance and made it AND. IT. IS. AMAZING!!! I used Kirby black beans and the only laughing cow cheese I had was the light french onion... and it came out SPECTACULAR! My hubby and I loved it! You have to try! - 2/12/12

  • I made this tonight, it was delicious! I added some lime juice and used the Laughing Cow garlic and herb. There was a little something missing with the taste, so I'm going to try another cheese next time. I mixed the sweet potato in the second half to save for bringing to work. - 8/27/11

  • If you are in a hurry, I micrtowaved the sweet potato. Then I microwaved the black beans and used a garlic and herb laughing cow wedge to replace the garlic, onion and spices. Not as good as the origional recipe, but still very tasty. - 1/18/11

    I made up all the burritos and individually wrapped each one. I froze all of them for grab and go box lunch items during the week. They smelled so good, a co-worker asked me to bring him one the next day. He's Puerto Rican and absolutely loved the flavors. The sweet potatoes and a creamy flavor! - 3/10/07
