Turkey Cutlets in Lime Cream

Ingredients

    4 chicken or turkey breast (4oz) ea.
    1 Tbl plus 1 tsp lime juice
    1/4 tsp salt and black pepper
    1 TBL unsalted butter
    1/3 shallots chopped
    1/3 cup of dry white wine
    1 cup chicken stock
    1 tsp grated lime peel
    1/4 reduced fat sour cream with 1 tsp cornstarch
    2 TBL fresh chives or thinly sliced green onion tops.

Directions

Sprinkle turkey breasts with 1 TBL spoon lime juice and the salt and pepper: let stand for 10 min. In a nonstick skillet, melt the butter over moderate heat until bubbleing. Add the turkey and cook 1.5 minutes on each side or until golden and juices run clear when the flesh is pricked with a fork/ transfer to a plate.
Add the shallots to the skillet and cook, stirring for 1 min. or until the liquid is reduced to 2 TBL. Add the stock and lime rind and simmer the mixture, uncoverd, for about 5 mins or until the liquid is reduced to .75cp.
Lower the heat, stir in the sourcream mixture, and simmer, stirring onstantly, for 1 - 2 min.Add the reamining tsp.of lime juice and sprinke with the chives.
Serves 4.
