Absolutely delicious and so low in calories! I have this pretty much every day for a filling yet light lunch. This recipe can easily be changed around to suit your taste, add different veggies, meat, potatoes, etc. Just be sure to adjust nutritional information. Absolutely delicious and so low in calories! Ingredients

four medium carrots, chopped into 3/4 inch slices
one onion, chopped
two medium zucchini
two garlic cloves, chopped
three stalk of celery, chopped
about 5 fresh basil leaves, chopped
3/4 cup tri-colored rotini
one can of green beans
one bell pepper, chopped
1/4 head of cabbage, coursely chopped
one can chickpeas
two cans of V-8 spicy tomato juice
one can italian style diced tomatoes
4 cups of fat free beef broth
1 cup of water
1/2 teaspoon oregano
1/2 teaspoon thyme
3/4 package of dry onion soup mix
salt and pepper to taste
Directions
Put all ingredients except for pasta and zucchini in large soup pot.
Heat to boiling.
Cover, and reduce heat.
Simmer for 1 hour.
Add zucchini and pasta.
Cover and simmer for 30 more minutes. Serve.
