Southwestern Salad

Introduction

This is a huge, hearty salad big enough for a meal! Packed with veggies and topped with chicken and salsa. It probably won't take long to throw together because most of the ingredients are from the pantry. It may seem like an odd combination, but the results are great. The high fat content is mainly due to the avocado, but it's the good kind of fat. This is a huge, hearty salad big enough for a meal! Packed with veggies and topped with chicken and salsa. Ingredients

    8 crisp romaine lettuce leaves
    1/4 c. black beans(drained)
    1/2c. sweet corn(drained)
    1/4 c. cherry tomatoes
    1/2 c. garbanzo beans(drained)
    1/2 c. avacado, chopped or sliced
    1 c. prepared salsa
    3 T. red wine vinegar, divided
    1 t. dried cilantro(or oregano)
    1 oz. thawed chicken breast, cut into chunks
    opt. lime juice, FF sour cream or baked tortilla chips.

Directions

Marinate chicken breast in 2 T. red wine vinegar and cilantro. Add additional spices if necessary. Let chicken marinate about 10 minutes. While marinating, chop lettuce into small bite size pieces. Divide into 2 salad bowls, and sprinkle with a little red wine vinegar. Top each salad with 1/4 cup each of corn, black beans, garbanzo beans and avocado chunks.(You can toss the avocado with lime juice for a tangy taste) Grill or sautee chicken breast. When chicken is prepared, top each salad with w/ 1/2 ounce. Garnish with 1/4 c. cheese, cherry tomatoes and 1/2 c. salsa. Sprinkle with extra cilantro for more spice. Enjoy!
