All American Potato Salad



Introduction

Original recipe that I have calls for Spicy mustard but I don't care for it so I used regular yellow mustard instead. Original recipe that I have calls for Spicy mustard but I don't care for it so I used regular yellow mustard instead.
Number of Servings: 8

Ingredients

    2 lbs red potatoes - unpeeled
    1/3 c thinly sliced celery
    1/3 c finely chopped onion
    2 tbsp sweet pickle relish
    1/3 c reduced fat mayo
    1/3 c nonfat sour cream
    2 tbsp mustard
    1/4 tsp black pepper

Directions

Cut potatoes into 3/4" pieces and cook until tender (about 20 minutes)
Rinse with cool water and drain
Place the potatoes in a large bowl
Add celery, onion, relish and toss gently to mix.
Combine the rest of the ingredients in a small bowl and stir well.
Add to the potato mixture and carefully stir to coat potatoes evenly.
Cover and chill for at least 2 hours before serving.

Makes 8 servings

    This was excellent. Definitely a keeper. I added a little celery seed and sweet paprika to the dressing. - 4/9/09

  • This potato salad is very tasty, yet, has lower fat and salt than the store prepared one. We just returned from a quick trip as such had no sour cream, I used 1 tbsp of red wine vinegar for 1lb. of potatoes. Came out yummy! Oh forgot! added shredded baby carrots for color-Thanks for the recip - 7/23/09

  • Tasty! I don't care for celery and hate the taste of raw onion so I tweaked it. I added some freeze dried chives instead of onions, and also added paprika. Overall very very yummy! My only critique is relish was very overpowering. Might halve it next time, for less intensity. Very yummy!! - 5/18/09
