Introduction

My family loves this stir fry over rice. My family likes to make burritos the next day if we have any left over. My family loves this stir fry over rice. My family likes to make burritos the next day if we have any left over.
Number of Servings: 6

Ingredients

    3/4 cup Risotto
    2 cups Water

    1 Chicken Breast (boneless/skinless
    2 tlbs Olive Oil
    1 cup Green Pepper
    1 cup Yellow Pepper
    1 Onion (sliced)
    1 1/5 cups Broccoli florets
    1 pkg Stir Fry Seasoning Mix

Directions

Cook Risotto in water until water is absorbed.

Cut chicken into strips and cook in olive oil til just about cooked through. Add green and yellow pepper, onion and broccoli florets. Cook about 8 minutes. Add 2 tlbs oil, soy sauce and stir fry seasoning mixed with 1/2 cup water into chicken and vegetables. Heat for about 1 minute or until thickened. Chicken will be cooked through by now.
Serve over rice.
