Zucchini Egg Bake

Ingredients

    1 Cup Bisquick Heartsmart
    4 large eggs
    2 cups shredded zucchini
    1/2 small onion shredded
    1 T Olive Oil
    1 serving Firgo 3 Cheese Italian
    1/2 teas. paprika
    1/2 teas. dill
    1 teas. parsley
    1/2 teas oregano
    salt and pepper to taste
    ( you can add basil, omit dill, add whatever spices you prefer.

Directions

Preheat oven to 350.
Spray a 13x9 glass baking dish.

Shred onion and zucchini. Place in a bowl. Add seasonings, salt and pepper, cheese and olive oil. Mix well.

Beat eggs and add to mixture.
Add bisquick and stir.
Bake in greased baking dish at 350 degrees for 20-25 minutes.

Serve warm for breakfast or room temp with salad. This allows for a large seving since you are cutting the dish into 8 squares.
