Zucchini Parmesan

Introduction

This is a family recipe and tasty way of preparing zucchini that you could eat alone or top pasta with. This is a family recipe and tasty way of preparing zucchini that you could eat alone or top pasta with.
Number of Servings: 4

Ingredients

    3/4 to 1 Medium Onion
    4 Cloves Garlic
    2 Med-Small Zucchini or 1 Large Zucchini
    1/2 Cup water
    2 Tbsp Olive Oil
    1 Tbsp Salt
    1 Tsp Black Pepper
    3/4 Cup Marinara Sauce

Directions

1. Heat olive oil in a large frying pan over medium to low heat, let heat while you prepare the vegetables.
2. Smash, peel, and mince garlic. Chop onion. Dice zucchini. Add garlic and onion to hot oil, cook with a controlled even sizzle (no spitting). Cook about 5 minutes or until light golden color.
3. Add zucchini, water, salt and pepper. Stir then cover and cook (slow even boil) until zucchini is tender but not mushy, stirring occasionally, about 10 - 12 minutes.
4. Add sauce and stir. Remove from heat and serve.

Makes about 2 1/2 to 3 Cups, Serving size is 1/2 to 3/4 cup
