    12 OUNCES COOKED BEEF, CHOPPED OR GROUND

    1 JAR CASA MAMITA SALSA FROM ALDIS

    1 MEDIUM ONION, CHOPPED

    1 BELL PEPPER, CHOPPED, MAY SUB CHALACA OR PABLANO PEPPERS IF AVAILABLE FOR A NICER BITE TO THIS. CUBANELLE PEPPERS ALSO WORK WELL WITH THIS

    1 ROUNDED SPOONFUL OF MINCED GARLIC

    1 TBS OLIVE OIL

    TBS CUMIN

    TBS CHILI POWDER , IF TOO SPICY LEAVE THIS OUT.




Directions

MAKES 10 ONE CUP SERVINGS, WE EAT 3 CUPS EACH FOR DINNER. LEFTOVERS FOR LUNCH.

(USE LARGE 12 INCH SKILLET FOR THIS DISH)

PREPARE PASTA PER PACKAGE DIRECTIONS.

WHILE WATER IS COMING TO BOIL, BROWN GROUND MEAT (OR THIS CAN BE DONE AHEAD OF TIME IF YOU WANT)

IN SEPERATE SKILLET SAUTE CHOPPED ONION, PEPPERS AND GARLIC. IN ABOUT A TBS OLIVE OIL.

WHEN BEEF IS DONE, DRAIN AND ADD THE SAUTEED FOOD.

TO THIS ADD 2 CUPS OF CHOPPED CAULIFLOWER AND ONE CUP CORN.

ADD ONE JAR SALSA, STIR WELL, COVER AND COOK OVER MEDIUM HEAT, STIRRING OCCASIONALLY.

ADD IN THE SPICES.

WHEN PASTA IS DONE, DRAIN AND ADD TO SKILLET. STIR AND ALLOW FLAVORS TO MINGLE FOR ABOUT 5 - 10 MORE MINUTES.

IF CALORIES ALLOW, MELTED CHEDDAR OR COLBY CHEESE IS REALLY GOOD WITH THIS, NOT CALCULATED INTO THE CALORIE COUNT.

FOR LOWER CALORIES, SUBSTITUTE CHICKEN OR TURKEY. IT IS JUST AS GOOD.
