Codfish en Papillote

Introduction

The original recipe called for flounder, but that was unavailable, so I substituted cod. Low fat and high in protein! The original recipe called for flounder, but that was unavailable, so I substituted cod. Low fat and high in protein!
Number of Servings: 3

Ingredients

    3 Cod fillets
    1 large tomatoe
    1 lemon
    1 tsp olive oil
    fresh herbs
    salt and pepper to taste

Directions

Place the cod fillet on a piece of aluminum foil. Sprinkle with fresh herbs, salt pepper and a bit of olive oil. Cover with thinly sliced tomatoes and lemon. Close the foil tightly, leaving some air inside , and scrunch the ends.
Cook in 400 F oven for 18 mins or until cooked through.
Makes 3 servings.
