Baked Chicken Reuben

Introduction

I found this recipe on Allrecipes.com. My husband loves Reuben's and I wanted a lighter version of them so using chicken breast was a good idea. To make serving size easier I cut the chicken breast into serving size before making. I found this recipe on Allrecipes.com. Number of Servings: 6

Ingredients

    18 oz boneless chicken breast
    1/4 teaspoon salt
    1/8 teaspoon ground black pepper
    1 1/2 cup sauerkraut, drained
    4 oz Swiss cheese
    1 cup thousand island low calorie salad dressing
    1/4 cup Skim milk

Directions

1. Preheat oven to 325 degrees F

2. Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices.

3. Mix milk with dressing and pour over chicken and sauerkraut.

4. Cover dish with aluminum foil.

5. Bake in preheated oven for 90 minutes, or until chicken is cooked through.
