Chicken and Rice with Mushroom Gravy EASY & Delicious!

Introduction

My mom and I used to eat this all the time when I was a kid and it is a great comfort food when you need it and is very filling! Goes great with green beans and a salad! Number of Servings: 4

Ingredients

    4 Boneless skinless chicken breast, 1 can of low fat Cream of Mushroom soup (Campbell's is best), 2 cups of white rice steamed, 2 cups of fresh mushrooms sliced, 1 tsp of minced garlic and a dash of salt & pepper to taste.

Directions

To prepare, slice clean mushrooms to your liking and steam rice. I use Minute Rice, but any will do. Clean and place chicken in skillet on medium heat. I do not add any oils or sprays, but you can if you would like. (If chicken sticks a little, add small amounts of water to the pan). Cook chicken until it is about done and then add the garlic, salt and pepper and mushrooms to the skillet. The juices from the chicken will work to sautee them. When chicken is finished and mushrooms are cooked but still firm, add the can of mushroom soup. You can add a little water to spread it out if you like runnier "gravy". Simmer for about 7 minutes and then remove from heat. Serve over rice and enjoy!
