Swiss chicken and noodles

Introduction

Number of Servings: 1

Ingredients

    8 oz whole wheat noodles
    2 tablespoons extra virgin olive oil
    1/2 cup chopped onion
    1 cup sliced mushrooms
    1/4 cup flour
    1teaspoon salt
    1/2 teaspoon pepper
    4 cups reduced fat/sodium chicken broth
    1 cup shredded swiss cheese
    2 cups cubed cooked chicken
    1 10oz bag frozen broccoli, thawed
    1 cup reduced fat sour cream
    1/2 cup bread crumbs

Directions

Cook noodles according to package directions.

In skillet, saute onions and mushrooms in olive oil untill tender. Stir in flour, salt, pepper, cook for 1 min. stir in broth. Bring to boi, reduce heat and simmer, stirring constantly until sauce is thickened.

Stir in cheese until melted. Stir in sour cream, chicken and broccoli. Toss with noodles. Pour into 13x9
