Number of Servings: 6

Ingredients

    5 1/2 cups water, divided
    3/4 cup dry bulgur wheat
    2 tsp olive oil
    1 cup each chopped onions and red bell pepper
    2 TB salt free chili powder
    2 tsp ground cumin
    2 tsp minced garlic
    28 oz can crushed tomatoes
    1-14 oz can pumpkin
    1 cup diced zucchini
    1 cup frozen or fresh corn
    1 14 oz can black beans
    1/2 cilantro

Directions

Bring 3 cups water and bulgur to boil and simmer 15 minutes. Saute peppers and onions in olive oil in large pot. Add spices, remaining water, tomatoes, pumpkin, zucchini, and corn and bring to a boil. Simmer 10 minutes. Add bulgur and beans.
