Easy Mini Manicotti

Introduction

I made up this recipe when I boiled too many lasagna noodles by accident. It worked out really well. I made up this recipe when I boiled too many lasagna noodles by accident. It worked out really well.

Ingredients

    * 12 Lasagna Noodles, cooked
    * 1 cup Cottage Cheese, 1% Milkfat
    * 1/2 cup Mozzarella Cheese, part skim milk
    * 1/4 cup Parmesan Cheese, grated
    * 1 cup Marinara
    * 1 egg

Directions

Boil lasagna noodles. Meanwhile, in a large bowl, mix the remaining ingredients. You may want to add the following herbs: oregano, parsley, basil, depending on your taste.

When the noodles are done, cool by rinsing under cool water. Spray a cookie sheet with cooking spray. Lay a noodle flat on the sheet and place two tablespoons of the mixture on one end. Gently roll the noodle up, keeping the cheese mixture inside. You may need to pin the rolls with a toothpick. Bake at 350 degrees for 10 minutes. Remove from the oven and cover each manicotti with a little marinara sauce. Return to the oven for an additional 10 minutes. Serve hot with a dash of parmesan or mozzarella on top.

Option: you can roll all of the manicotti, then place the cookie sheet in the freezer. Once the manicotti are frozen, you can transfer them to a ziploc bag for later use or smaller servings.
