Pumpkin Oatmeal

    .5 c oatmeal old fashioned

    .5 t cinnamon, pinch nutmeg
    .25 c. Libby's canned pumpkin
    .5 c. water
    .33 c. vanilla soymilk
    .5 t. vanilla extract


I make oatmeal on stove using the oats and water and soymilk. Halfway through, I add the pumpkin. Stir. . Sprinkle in the spices, sweeteners if desired. Finish cooking. Pour into a small corning dish. Add a tsp. of chopped walnuts. Pour remaining whipped egg white over top and bake or top brown until lightly browned on top. MAKES ONE SERVING
