Speedy Turkey Chili

Number of Servings: 4

Ingredients

    1 pound lean ground turkey meat
    1 can spicy V8 vegetable juice
    1 can red kidney beans
    1 packet chili seasoning mix
    1 small onion - chopped
    1 bell pepper, chopped

Directions

Spray a skillet with cooking spray and add the onions and bell peppers. Cook on medium for about 5 minutes. Add the ground turkey and brown the turkey until it is just done. Add the V8 juice, kidney beans, and chili seasoning packet. Turn the heat to low and cover. Allow to simmer slowly for about 15 to 20 minutes. Serve with shredded cheddar cheese on top if desired.
