1 lb mixed berries
1 Tbsp of lemon juice
3.5 Tbsp of Splenda baking sugar
1c. whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
2 Tbsp of smart balance buttery spread
1/2 c. of vanilla frozen yogurt (melted)
1/8 tsp of cinnamon
2. Meanwhile, in a bowl, whisk together flour, baking powder, baking soda, salt, 2 Tbsp of melted butter and stir until moist dough forms. Dividing evenly, spoon 6 dollops of dough over fruit. Combine cinnamon and 1 tsp of sugar and sprinkle over dough.
3. Cover pan tightly with foil, and cook over med-low until dumplings are set and tops are dry to the touch, about 15 mins. Serve Warm.
4. Optional: serve with 1/2 c. of vanilla bean frozen yogurt, extra yummy!
