Breakfast Tortilla Scramble

Ingredients

    1 1/2 c. fresh mushrooms
    1/2 c. chopped green peppers
    1/2 c. chopped red peppers
    1/2 c. chopped red onion
    6 egg whites
    3/4 c. black beans, drained and rinsed
    1/4 c. 2% shredded cheddar cheese
    3 Flatouts

Directions

Heat large frying pan on medium heat. Spray with cooking spray. Add peppers, mushrooms, and onions. Cook until tender, about 5 minutes. Spoon into a bowl, set aside. Spray pan again and add eggwhites. Scramble until cooked through, about 5 minutes. Add pepper mix, beans, and cheese to the pan with the eggs. Spoon onto a Flatout or tortilla of your choice. Can be topped with sour cream, guac, or salsa if desired, not included in the nutritional info.
