Chicken Chili Burgers

Introduction

Ingredients

    1 3/4 lbs. chicken cutlets
    1 lg red bell pepper, finely chopped
    1 cup chopped fresh cilantro
    3/4 cup purchased chili sauce (I use Bennett's)
    1/2 tsp canola oil
    4 oz sliced part-skim sharp cheddar cheese
    8 lite hamburger buns (I use Merita brand)
    1 lg red onion, sliced
    8 lettuce leaves

Directions

1. Rinse chicken and pat dry. Cut into 2-inch pieces and pulse in a food processor until coarsely ground. Transfer to a bowl; season with salt and pepper, if desired.

2. With your hands, mix the bell pepper, cilantro and chili sauce into the ground chicken until just combined. Do not overmix. Form into eight 1/2-inch thick patties.

3. Preheat grill. Lightly oil grill rack. Grill burgers on rack over moderate heat for 5 minutes. Flip burgers and top with 1/2 ounce of cheese and continue grilling until chicken is cooked through, about 5 minutes more.

4. Meanwhile, grill the buns, cut side down, until golden brown, about 1 minute. Arrange burgers on buns and serve with onion and lettuce.
