Mini Frittatas

Introduction

I got this from Parents Magazine March 2009. They called for peas but I substituted them with asparagus. I got this from Parents Magazine March 2009. They called for peas but I substituted them with asparagus.
Number of Servings: 4

Ingredients

    4 eggs
    1 cup asparagus, chopped up
    1 cup cooked tilapia or cod, flaked
    1 Tbs. fresh cilantro
    1/4 tsp pepper

Directions

Heat oven to 375. Lightly coat 4 ramekins with cooking spray; set aside. Whist together eggs, then stir in peas, fish, cilantro, and pepper. Spoon mixture into ramekins. Bake for 30 minutes or until puffed, set, and lightly browned. Loosen with a think metal spatula.
