Introduction

My family has enjoyed this for years. This is a low fat way to get alot protein and your veggies. My family has enjoyed this for years. This is a low fat way to get alot protein and your veggies.
Number of Servings: 4

Ingredients

    32 oz. 1% cottage cheese
    1 cup chopped green peppers
    1/2 cup chopped tomatoes
    1/2 cup peeled chopped cucumber
    1/2 cup of chopped red onions
    3 TBS pimento
    1 clove garlic minced
    1/2 tsp. salt
    1 tsp. pepper






Directions

Mix all of the ingredients together. You can eat right away, but the flavors come together if you let it chill the fridge for two hours. I usually make this before I go to bed and it is ready to go for lunch the next day. Makes 4 11/2 cup serving
