Broccoli raab Upkari (Sauteed)

Introduction

This method is so delicious - all my friends who have never tasted Broccoli raab, love it! If the broccoli raab tends to be a little too mature at times ( not its normal sweet but, a bit on the bitter side), add a piace of jaggery (cane sugar) or sugar int he raw for a sweeter bite. Whether you want to squeeze lemon on top or sprinkle with shredded coconut is up to you. This method is so delicious - all my friends who have never tasted Broccoli raab, love it! Ingredients

    Broccoli Raab, raw ( Rapini - broccoli rabe), 1 lb chopped
    Olive Oil, .5 tbsp
    Garlic, 3 cloves
    Indian Andhra mustard seeds ( small, dark brown) 1/2 tsp, ( Optional)
    *Hot Chili Peppers, dry,1 pepper (optional)
    Ocean salt, 1/8 tsp to 0.25 tsp

    Garnish with 2 tbsp of shredded coconut or a squeeze of a lemon wedge.

Directions

Heat olive oli in a heavy bottomed , Dutch Oven. Brown sliced garlic, add mustard seeds and when they have crackled, add chilie pepper, cut into pieces. Drop all the cut up broccoli raab, sprinkle with salt and stir well. If the broccoli raab is tender, it should be done in 3-4 minutes. At times, when the fresh raab is not as tender but, stems are quite mature, I would separate the stems and leaves and drop the 3/4" cut stems first in the Dutch oven to let it cook a bit longer, drop a tbsp or 2 or water, jaggery and then, drop the cut up leaves and florets till done! Sprinkle with shredded coconut for a yummy, tasty side dish that disappears in no time!

Note: Although, you use a bunch of 1 lb raab, it becomes so little when you cook ( just like spinach) and is plenty for 3 servings if you are broccoli raab lovers like us or is enough for 4-5 servings.
