1-3 TBSP butter or margarine
1 onion, chopped
2 C russet potatoes, boiled & slightly mashed
3 C vegetable, chicken, or ANY stock, or water
2-3 ribs celery, chopped
Salt and pepper, to taste
Milk, to add if soup is too thick
The nutrition values given are based on vegetable broth. For a richer soup, use chicken broth. Chopped parsley is good to add in.
