Greek Salad

Introduction

Great Lunch Salad, side for and evening meal Great Lunch Salad, side for and evening meal
Number of Servings: 1

Ingredients

    1/2 Cup Feta Cheese Crumbed
    1/2 Cucumber Diced
    approx 10 cherry tomatoes halved
    1/2 Red Onion finely chopped
    1 clove garlic crushed.
    1 Tbsp Dried Oregano
    Juice 1 fresh lemon
    1 Tbsp Olive oil
    1/2 Tsp or pinch of salt
    1 Tbsp Ground black pepper (I like lots so reduce to taste)

Directions

Chop cucumber, tomatoes and red onion.

Place above in dish with crumbed feta cheese.

Add Oregano, salt and pepper and crushed garlic

Add lemon juice and olive oil.

Mix well. Although ready to eat now best left to marinade for approximately 1/2 hour.

Great on it's own, served with wholemeal pitta, grilled kebabs yum!

    I used fat free crumbled feta and green onions with slivers of spanish onion instead of red (though red is delicious). I used different herbs also, fresh basil is terrific ... (I think I made a different recipe altogether) ... anyway it's good! - 9/10/09
