Egg Beaters, original - 2 servings
Mixed Vegetables, 2 cups
Chicken Breast, no skin, 8 ounces
Salsa, .25 cup
Monterey Cheese, .25 cup, diced
Spray an oven-safe pan with cooking spray. I like cast iron for this.
Pour egg beaters into pan.
In a bowl, combine the remaining ingredients except for the cheese and pour over egg beaters, making sure to cover as evenly as possible.
Top with cheese. Add a few sprigs of cilantro if you like.
Bake for 30 minutes or until the eggs and cheese have set.
