Spinach and Mozzarella Stuffed Turkey Meatloaf

Introduction

Ingredients

    1.25 lbs Ground Turkey
    .5 cup oatmeal
    .5 cup chopped onion
    .5 cup BBQ sauce
    2 cups of fresh spinach
    1.5 tsp chili powder
    1 tsp garlic powder
    .5 tsp salt
    .5 tsp black pepper
    2 large egg whites

Directions

Preheat oven to 350 degrees
Combine the ground turkey, oatmeal and onion 1/3 cup of bbq sauce, and remaining ingredients (except cheese and spinach) in a large bowl.
Take half the meat mixture and spead in a bread pan.
Layer Spinach and 4 oz of cheese.
Layer the remaining mixture on top of spinach and cheese.
Cover with remaining bbq sauce and sprinkle cheese.
Bake for 1 hour.

    Thanks so much for this, feeding the kids is always a tricky task. I used the muffin tin idea, but put whipped cauliflower on top so they looked like cupcakes. It was a huge hit for the family. Great recipe!!! - 12/16/09

    This recipe was really good! I made a few mistakes when making it and added all the BBQ sauce to the meat. I also used fresh garlic, onion powder and substituted the oatmeal with bread crumbs. My husband loved it as well! I will be making this again! - 3/23/11

    This was so good. I didn't add or subtract anything and I loved it! Even my brothers who don't like spinach, or turkey were tricked into liking it! A wonderful low-cal recipe! I made it with green beans and brown rice. - 3/16/11

    Amazing. altered it 1/8 tsp Course sea salt, NO pepper (it causes arthritis symptoms)
    Used less BBQ sauce, added a splash of Worchestershire Sauce, Real Red & Gr Peppers diced, 4 Tb grd Flax seed (Thnx POOKIEBEAR)
    No Cheese, lots of flavor-loved it
    A hit-even 4 my non loving meatloaf eaters :) - 1/17/11

    AWESOME. I added a bit more onion and used a honey garlic bbq sauce and it turned out great. I also used Jennie-o turkey burgers (already seasoned) instead of regular ground turkey for better flabor. Would even be great without the mozzarella (to cut calories). Highly recommended!! - 9/15/09

  • For people wondering about how much cheese to use, the amount is 6 oz. I checked the additional nutritional information and it lists 1 oz of cheese per serving and there are 6 servings. - 8/11/14

  • I love this recipe. I use jenni o 93 percent lean ground turkey and I up the oats by one quarter cup. I do not use the cheese. I add green peppers and mushrooms and saute them with the onion. Great recipe! - 1/29/13

  • I will make it again but closer to the recipe. I opted to make it lower in sodium by not including the 1/2 tsp salt and replaced the bbq sauce with no salt added tomato sauce. - 2/26/12

    I didn't like the bbq sauce being in there instead of tomato sauce or cream of mushroom soup. I thought I would try but I did not really like it. For me, it didn't really go together. - 2/5/12

  • This is delicious. I used swiss cheese instead of mozzarella and didn't put any on the top, just a layer of slices in the middle on top of the spinach. I will be making this again and again. - 1/29/12

  • This is similar enough to my recipe that I didn't create anohter one for the nutritional info. I mix the spinach in evenly and make several of these at a time and freeze in loaf pan. Put whole pan in crock pot w water cook 6 hrs on low. Also great made into meatballs. - 1/9/12

  • Husband is so picky that it's rare to get 5 stars out of him, but we both LOVED this. So incredibly yummy. How are we supposed to manage portion control with flavours like these?! :-) I added ground flaxseed meal (4T) and quickly sliced and froze the rest of the loaf so we wouldn't nibble it away! - 6/20/09

My boyfriend said he preferred this one over my regular meatloaf which he said he loved, but since this is a healthier version I am going to stick to this one!   • This is a GREAT recipe! I used cupcake/muffin pan instead of a baking dish. Doubling the recipe yielded 24 mini loaves. Perfect for portion control! And they freeze beautifully. Grab 2, throw them in your lunch bag with a salad on the side and go! LOVE EM, LOVE EM!! Did I mention LOVE EM? :) - 3/30/09

    Oops, I forgot to add the spinach to the ingredient list, it is added to the nutritional list though. I've updated the receipe to reflect 2 cups of spinach. This is one of my favorite comfort foods and great with brown rice. Enjoy!
