Jumbo Shells--12 oz box
Ricotta Cheese, part skim--1 cup
Spinach--10 oz frozen, thawed and drained
Parmesan Cheese--0.5 cup grated
Egg Beaters--0.25 cup
onion powder--1 tsp
Marinara Sauce--3 cups
Mozzarella Cheese--1 cup,grated
Boil shells until al dente--10 min.
Rinse and drain shells.
Combine spinach, cheeses, egg substitute, and seasonings in a large bowl.
Fill each shell with a heaping tablespoon of spinach-cheese mixture.
Pour about a cup of sauce into a baking dish.
Arrange stuffed shells in dish.
Pour remaining sauce on top--to taste.
Cover with foil and bake for 25min.
Uncover, sprinkle with mozzarella, and bake 5 min. more.
Makes approximately 6 servings of 5 shells each.
