Introduction

This recipe was born out of what to make with leftovers. I had LC light cheese stuffed turkey burgers, cauliflower and broccoli from two different nights and decided on this. It turned out surprisingly good. Definitely a keeper. This recipe was born out of what to make with leftovers. Ingredients

    4 oz (1.50 cups) Dreamfields Low Carb Penne Rigate
    1/2 Tbsp Olive Oil
    1 cup chopped onion
    1/2 cup chopped green pepper
    2-4 oz Jennie-O Extra Lean Ground Turkey burgers stuffed with 2 Laughing Cow Light Garlic & Herb Spreadable Cheese (pre-cooked left overs from another meal)
    1 cup tomato sauce
    5 oz broccoli (steamed)
    1 cup cauliflower (steamed)
    2 Tbsp sliced black olives
    1 tsp dried oregano
    1 tsp black pepper

Directions

3 - 2 cup servings

Boil water for pasta, cook as directed. Drain and set aside.

Heat large skillet and add olive oil. Saute onion and green peppers until translucent. (If not using leftovers, add your turkey at the same time as the onions and green pepper and add the cheese when adding remaining ingredients.)

Add remaining ingredients and turn heat to low. Simmer for 20-25 minutes.
