Ingredients

    4 oz (112 g) - 96/4 Extra Lean Ground Beef
    61 g - Rotel Tomatoes (Diced Tomatoes with green chilies)
    62 oz - cooked brown rice
    30 g - chopped baby carrots
    65 g - chopped zucchini
    5 g - chopped cilantro
    19 g - chopped green onion
    132 g - green bell pepper
    28 g - Kraft fat free shredded cheddar cheese

Directions

Brown meat in a skillet with a small amount of water. Add all other ingredients - except bell peppers. Season to taste and cook for 15 minutes. Add additional water if needed. Cut bell peppers in half lengthwise and stuff with mixture (to decrease cooking time you could pre-steam pepper). Place peppers in baking dish and cover with foil. Bake in 350 degree oven for 15-20 minutes, or until vegetables are tender.
