Dairy Free- Mashed Potatos

Introduction

My daughter is allergic to milk so we came up with a recipe for mashed potatos using butter that is dairy-free and soy milk. My daughter is allergic to milk so we came up with a recipe for mashed potatos using butter that is dairy-free and soy milk.
Number of Servings: 8

Ingredients

    3 to 3.5 lbs of Medium Sized Russet Potatos
    3Tbs Smart Balance Buttery Spread
    1cup 8th Continent Original Light Soy Milk
    Salt and Pepper to Taste

Directions

Peel and cut potatos to 1 inch cubes.

Place peeled potatos in dutch oven and boil until potatos are tender.

Place potatos, milk, and butter into mixer and mix for 3 to 5 minutes. (speed 4 on Kitchen Aid Mixer or medium speed)

Add salt and pepper; roughly 1tsp to 1.5tsp each.

Change mixer blades to wisk and fluff on high for 10 minutes on maximum speed.
