4 corn tortillas
1 1/2 cups of bell peppers, chopped (green, yellow, red)
2 1/2 tsp salt-free Mexican seasoning
1/2 tsp salt
1/4 tsp crushed red pepper
1 cup shredded cheese
3 chicken breast w/o skin and bone
Coat a large skillet with cooking spray; place over medium-high heat until hot. Add peppers; saute 4 minutes. Add chicken, seasoning, salt and red pepper. Saute 2 to 3 minutes or until chicken is done.
Top each tortilla with 1/2 cup chicken mixture and 1/4 cup cheese. Broil 1 minute or until cheese melts.

Sorry about that. I added the chicken to get the nutrition value but I forgot to add it to the baking instructions. It is there now.
