Introduction

Instead of following the recipe I found, I made adjustments and ended up with this. DH loved it.
We had it on spaghetti (not included in nutritional information).

Number of Servings: 4

Ingredients

    1 pound cleaned, cooked frozen mussels
    1 tbsp canola oil
    1 cup diced mushrooms
    1 cup diced onions
    3 cloves minced garlic
    2 tbsp Italian herb seaoning
    1-14.5 oz can diced tomatoes

Directions

1 Prepare vegetables, heat oil in skillet. Add onions and mushrooms. Saute
2. Add garlic, saute
3. Add canned tomatoes. Simmer until liquid is reduced.
4.Place mussels on top and cover with herbs.
simmer for 10 minutes.
