Balsamic Asparagus with garlic potatoesSubmitted by: CALLIE25
IntroductionThis is great to wrap up in foil and put on the grill too! This is great to wrap up in foil and put on the grill too!
4 cups cubed potatoes (I like to use red potatoes)
3 cups asparagus
4 cloves garlic
10 tablespoons balsamic vinegar
2 tablespoons extra light olive oil
While potatoes are cooking prepare asaparagus - pour the balsamic vinegar over and let soak.
When potatoes are tender, remove from oven and add asapragus with the balsamic. Recover and cook for 10-15 minutes. I usually take foil off for last 5-10 minutes of cooking time.
Cooking time varies with oven and size of cubed potatoes.

Very tasty. I thought that 10T of balsamic vinegar might be overkill, but it wasn't. I added rosemary and thyme when tossing the potatoes and garlic with oil. I made the potato mixture in a freezer bag (it makes evenly coating the veggies much easier). I reused the bag to marinate the asaparagus. - 5/3/08
