Introduction

Number of Servings: 4

Ingredients

    6 oz farfalle pasta
    1 Tbs olive oil
    1 med onion, chopped
    4 oz mixture of mushrooms ( I used baby bella, shitake & oyster)
    3 cloves garlic, minced
    4 cups spinach, thinly sliced
    1 tsp thyme leaves, chopped
    1/8 tsp fresh ground pepper
    2 Tbs shredded Parmesan

Directions

1. Cook pasta according to package directions. Drain.

2. In a large skillet, heat oil over medium heat. Add onion, mushrooms and garlic and cook, stirring occasionally, until tender, 2-3 minutes. Stir in spinach, thyme and pepper and cook until spinach is slighlty wilted, about 1 minute.

3. Toss mushroom and spinach mixture with pasta and sprikle with cheese. Serve

    Great dish! Because I had these on hand, I substituted 1 T of fresh thyme for 1 t of dried and :( a drained pkg of thawed spinach, and it was still great. The combo of onion, mushrooms, parmesan, thyme, garlic, & olive oil gave amazing flavor. With fresh spinach it'd be awesome! I'll make it again - 6/19/09

    It was good, I also added some sour cream. Unfortunately, my husband works the late shift. I made it early and ate it, it was delicious. Put it in the fridge and reheated it for him and there was no sauce left - I guess it was soaked up by the noodles and it just didn't taste as good. - 5/19/10

    SO EASY! Really quick to make and very filling. I used a variety of wild mushrooms which really increased the flavour as well as chestnut mushrooms. I added low fat mozzarella to my friend's portion, only a small amount, which she said made it even better. This will be a frequent!! - 5/14/12

    This was good especially because I made it with an empty fridge and cupboard. (need to get groceries) I added black beans, and sun-dried tomatoes. I also used frozen spinach and canned mushrooms. Fresh ingredients would make this even better and it is so easy to change up. - 3/8/11

    This recipe was so light and FRESH! I loved the combo of mushroom and garlic, onion and spinach. I added a grilled chicken breast and at the end, I removed everything from the pan and poured in about 1/4 cup of heavy cream and melted the parmesan in that for a sauce. - 3/8/10

    Just barely OK even after my modifications (added artichokes, way more mushrooms, cayenne pepper, ginger). First of all, the amounts of ingredients seemed totally weird. 6 oz of pasta? That's not even one cup of pasta and it's supposed to be 4 servings? Only 1 oz of mushrooms per serving? - 2/20/11

    This was good. It was bland. I added chicken as well, but it needed something. I also kept the pasta separate from the "sauce" in the fridge for leftovers and it reheated just fine! - 10/7/10

    It was delicious! Even my carnivorous husband enjoyed it! I used frozen chopped spinach because I was too lazy to slice the fresh tonight but next time I will go with the fresh even though the frozen was good! I will be making this a lot for our meatless meal! - 12/16/10

    This was so delicious! I used whole wheat penne and added shrimp for some extra protein and this was a huge hit with me and my husband. My husband's only complaint was wanting more spinach, but he's a veggie-aholic so I don't think this is a bad reflection on the recipe. - 2/9/11

    I prepared the recipe as shown but added already cooked chicken, peas and cherry tomatoes and 2 tablespoons of sour cream before mixing the pasta with the other ingredients. Definately made it more filling and appealing although I agree with the others that it was rather bland. Had to add sea salt. - 11/10/10

  • Great recipe! Upped the pasta to 12oz and mushrooms to 8 oz. to feed 4 of us as a main meal. I also added some sea salt and about a tablespoon more of oil or it would've been too dry! - 11/5/13

  • I doubled the mushrooms & used dried thyme. I also used garlic-flavored extra virgin olive oil. It's good but I'd like to try adding sun-dried tomatoes next time. Oh and yes, there is enough pasta! - 6/25/13

  • I made this last night. After a bit of modification (and what recipe can't benefit from a tweak?) it was delicious. I added some cooked chicken, more seasonings and a half cup or so of the pasta water since it seemed dry. I used frozen chopped spinach. Very filling and delicious. 4.5 stars - 2/26/13

  • It was fast and yummy but I wouldn't describe it as filling. If I hadn't doubled the mushrooms it wouldn't have been able to pass as an entree. To get the garlic flavor to pop you have to let it cook a bit in the olive oil before adding the mushrooms; that's how you avoid the bland issue. - 9/12/11

  • A great light dinner, with a salad and glass of white wine. Flavor is subtle and delicate. I added twice the amount of mushrooms, extra garlic, and used a pretty big onion. I bought a large bag of spinach, however, which wilted down to nothing.. I'll use two next time. - 6/20/11

  • So good, so simple, thanks for sharing. We used baby bellas and buttons. We doubled the mushrooms to 8 oz. We added about 6oz of cherry tomatoes and it added a lot to the dish both taste-wise and visually. We used baby spinach instead of regular. Pair with sourdough bread. Fantastic together!!! - 8/29/10

    I was disappointed. I made alot of alterations based on what everyone said. Added seasoned chicken, fresh thyme and basil, fat free sour cream for flavor and texture, mozzerella cheese bc i had it, tomatoes, and I still found it rather bland. It was missing something. - 5/26/10

  • Delicious!! My husband usually doesn't like pasta without a sauce on top of it, but he loved this, and I loved it because of all the veggies! I added shrimp for protein and it doesn't add many calories at all, and tomato because it needed to be eaten...great way to use up leftover veggies/spinach! - 2/19/10
