Always Ready Bran Muffins

Introduction

This moist bran muffin batter can be stored in refrigerator for up to 2 weeks so you can make them as you need them. This moist bran muffin batter can be stored in refrigerator for up to 2 weeks so you can make them as you need them.
Number of Servings: 32

Ingredients

    3 cups whole bran cereal
    1 cup boiling water
    3/4 cup brown sugar
    1/2 cup butter (or margarine)
    3 eggs
    3 cups all purpose flour
    1 tablespoon baking soda
    2 cups of buttermilk (I used 2 tbs lemon juice and 1% milk)

    Optional:
    nuts, chocolate chips, raisins, cinnamon, etc.

    I added 1/4 cup chopped walnuts, 1/4 cup shredded carrots, and 1 tbs pumpkin pie spice


Directions

Measure cereal in bowl and mix with water. Set aside.

Cream brown sugar with butter and then add eggs. Beat until light. Stir in flour, baking soda, and buttermilk. Add mixture to cereal.

Line or spray muffin tins. Spoon 1/4 cup batter into muffing tin. Bake at 400 degrees 15-19 minutes.

Using 1/4 cup batter, recipe yields apx. 32 muffins.
