Ingredients

2 tablespoons olive oil
1 cup chopped onions
1/2 cup chopped carrot
1/2 cup celery
1/4 cup chopped green bell pepper
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried thyme leaves
1 pound extra lean ground beef
1 can chopped canned tomatoes with juice
1/2 cup water
1 can 6 oz. tomatoe paste
1 tablespoon Worcestershire sauce
2 teaspoons red-wine vinegar
1/4 teaspoon hot pepper sauce
Salt and freshly ground black pepper to taste
four 2 ounce rolls or hamburger buns
Directions
In a medium saucepan heat oil; add onions, celery, carrot and bell pepper. Saute, stirring occasionally, until onions are translucent. about 10-12 minutes. Add oregano, thyme and beef, breaking up beef with a wooden spoon. Saute until beef is no longer pink, about 3-4 minutes.
Combine tomatoes, water and tomato paste, and add to berf mixture. Cook for 1 minute. Add Worcestershire sauce, vinegar, red pepper sauce, S & P bring to a boil, lower heat and simmer for 10 minutes stirring occationally. Serves 4 persons approximately 1 cup per person depending how many veggies you added.
