Introduction

This broccoli cheese soup is great as a soup, but also great as a topping for a baked potato. This broccoli cheese soup is great as a soup, but also great as a topping for a baked potato.
Number of Servings: 8

Ingredients

    2 lb Broccoli Frozen
    1 10 oz. can Rotel Original
    3 cups Chicken Broth
    8 oz. Velveeta Light Cheese
    1/2 tea. garlic
    1/4 cup chopped Onion
    2/3 cup Non-fat Dry Milk Powder (Carnation)

Directions

Chop broccoli finely.
Add broccoli, chicken broth, garlic, onion, and Rotel to a large sauce pan. Heat over medium heat about 45 minutes. Cook until broccoli is soft.

Add Velveeta and powdered milk. You can keep over low heat, but do not boil or it will curdle.

Makes 8 soup servings=About 150 calories each.

For a little less spicy soup, Rotel Mild can be use substituted.
