Fresh Tomato-Squash Salad

Introduction

Number of Servings: 6

Ingredients

    3-1/2 cups diagonally sliced small yellow squash (about 1 pound)
    1/4 cup packed fresh basil leaves
    3/4 pound tomatoes, cut into 1/2-inch thickness
    1/4 cup white wine vinegar
    1/8 teaspoon salt
    1-1/2 teaspoons olive oil
    1/2 cup vertically sliced red onion
    1 clove garlic, minced


Directions

Arrange squash in a steamer basket over boiling water. Cover and steam 1 minute; drain. Plunge squash into ice water; drain well. Combine squash, tomato wedges, onion, and basil in a bowl; set aside. Combine vinegar and remaining ingredients stir well. Pour over vegetables; toss gently. Serve at room temperature or chilled. Yield; 6 servings.
