Number of Servings: 10

Ingredients

    2 Tbsp Olive Oil
    1 Onion, chopped
3 Tbsp chopped garlic (about 1 bulb)
    2 cups chopped mushrooms
2 lbs lean ground beef (I used 9% in the nutrition calculation)

    1 Tbsp dried parsley
    1 tsp paprika
    2 tsp dry mustard
    2 tsp salt
    1 tsp worcestershire sauce

    1/2 cup whole wheat flour
3 cups chicken or beef broth
    2 cups lowfat plain yogurt

Directions

Chop onions, garlic, and mushrooms and saute in ollive oil. Add ground beef and spices and cook until meat is done.

Add flour and stir until you can't see it anymore. saute for about a minute and then add broth, stirring until thickened. Add yogurt and stir until smooth. Let simmer, stirring occasionally while you cook whole-grain egg noodles.

Serve over noodles with something colorful like my sweet potato salad.

Makes about 10 servings of 1 cup each. Can easily be halved for smaller families.

  • This was an impressively tasty and easy to make recipe! I used non fat greek yogurt and it was super creamy. I also plan on making on making this and substituting portabello mushrooms for both the beef and the shrooms. Nice Job :) - 12/22/12

  • This was very good. The only complaint I had was it was a little salty and I even cut back on the amount of broth I used. Thanks for sharing. - 8/5/09

  • Delicious! Just made this, of course I didn't have the listed ingredients and had to make a couple substitutions, sliced top round instead of ground beef and sour cream instead of yogurt, but it came out fabulous! Thank you for sharing. :) - 5/20/09

  • I made this recipe pretty much as written, except I cooked the beef separately and drained the fat off, then added it back in with the spices. I also used portobello mushrooms, since that's what I had on hand. It was delicious, filling, and even better the next day! - 3/26/09

That's the beauty of this recipe - it doesn't use any substitutes. Just real food.
