1 bag (40-60 large) frozen shrimp, thawed
2 Tbsp red curry or garam masala
1 Tbsp grated ginger
2 Tbsp margarine, melted (calorie count uses Brummel and Brown)
2 Tbsp coconut, shredded and toasted
2. Mix melted margarine, curry/garam masala, and ginger in a bowl
3. Add shrimp to margarine mixture and stir to coat shrimp
4. Saute shrimp on medium heat for 5-6 minutes, until warmed through
5. Sprinkle shrimp with coconut.
Serve over basmati rice (not included in calorie count).
