Crustless Ham and Spinach Quiche

Introduction

These little babies pack a powerful protein punch! 4 grams of carbs and 11 of lean protein will get your morning hopping! I like to make a big pan on the weekend, and eat them through the week, either as a quick breakfast or as a high protein snack.

These are very dense. If you want a fluffier version, up the egg and egg white component and cut back on the veggies. I personally like lots of goodies in my quiche.

Ingredients

    100 Grams Mushrooms, chopped
    15 oz Frozen spinach, thawed and chopped
    55 grams white onion
    2 eggs
    6 egg whites
    200 grams Ham
    226 grams cottage cheese
    1 cup low fat cheddar
    Salt
    Pepper
    Basil Leaves

Directions

In a hot pan with a bit of oil, sautee the mushrooms and onions. When cooked, add spinach and ham, heat through and ensure any extra liquid from spinach is cooked out.

In a separate bowl, mix your eggs, egg whites, cottage cheese, cheese and seasonings.

Mix in veggies, stir very well.

Spoon into a 12 muffin cup pan (sprayed with Pam).

Cook at 350 for about 30 minutes or until set and lightly browned.
