Roasted Tomato Sauce

Introduction

Ingredients

    3 lbs (about 18) plum tomatoes, cut in fourths lengthwise
    1 large onion, halved and then sliced crosswise
    1 Tbsp balsamic vinegar
    3 cloves garlic, minced
    3/4 tsp of salt*
    1/4 tsp fresh ground pepper

    I usually use less salt

Directions

Preheat oven to 375. Spray 2 large nonstic baking pans with olive-oil nonstick spray

Arrange tomatoes and onions in single layers on the pans. Sprinkle with the balsamic vinegar, garlic, salt and pepper. Spray lightly with olive-oil nonstic spray. Roast until the tomatoes and onions are lightly browned and have an intense sweet aroma, approx 50 min.

Transfer to a food processor. Pulse until combined, but still chunky

makes 5 1/2 cup servings
