2/3 cup Tyson Grilled Chicken Breast
1/2 teaspoon low sodium taco seasoning
2 (8 inch) 98% fat free flour tortillas
1/4 cup fat free refried beans
2 Tbsp thinly sliced scallions
1/2 cup reduced fat cheddar cheese (w/jalapenos)
6 Tbsp salsa
Put the tortillas in a large nonstick pan over medium heat. Cook about 20 seconds, turn stack. Cook another 20 seconds until tortillas are warm and soft.
Spread half of each tortilla with the refreid beans, 1 Tbsp scallions, 1/3 cup chicken, and 1/4 cup of cheese
Fold tortillas in half, and place back in pan. Cook about 2 minutes each side, or until warmed thru and cheese is melty.
Cut each quesadilla into 3 wedges, and serve immediately with salsa.
(2 wedges per serving, 2 tbsp salsa per serving)
