Huge veggie and tuna salad

Ingredients

    4 cups spinach
    2 cups arugula
    2 slices red onion, chopped
    2 slices red bell pepper, chopped
    2 stalks celery, chopped
    3 ounces tuna, chopped
    1 hard boiled egg, chopped
    2 red potatoes, boiled, and chopped

    1 ounce grapefruit juice
    1 tsp dijon mustard
    1 tsp soy sauce
    1 tsp thyme

Directions

Cook potatoes, or use leftovers from a previous meal

Cut all veggies into chunks..

whisk ingredients for dressing

put greens into bowl add other ingredients add dressing and toss
