Chicken Pita Pizza

Ingredients

3 oz Chicken Breast (skinned)
1 cup fresh chopped spinach
3 mushrooms, medium, fresh
1 garlic clove
1 teaspoon olive oil, extra virgin
2 tablespoons HT Reduced Sodium Chicken Broth
1 Whole wheat Pita (about 4oz)
1/8 cup spaghetti sauce, reduced sodium
1/8 tsp basil, dried
1/8 tsp oregano, dried
Directions
• Preheat oven to 400°F. Wash and chop chicken, spinach, mushrooms and garlic.
• Heat olive oil in a saucepan over medium-high heat; add garlic and saute´ for one minute.
• Add chicken and cook until tender.
• Add spinach and mushrooms and heat until spinach is wilted, adding broth, a small amount at a time as needed, to prevent sticking. Remove from heat.
• Place a pita round on a flat baking sheet lightly coated with non-stick cooking spray.
• Spread pita round with spaghetti sauce (1/8 cup is about 2 tablespoons).
• Spread chicken/spinach mixture on top of prepared pita; sprinkle with mozzarella cheese that has been shredded, basil and oregano.
• Bake pizza in oven for 8 to 12 minutes, or until cheese is melted.
